My boarder has turned us all into a bit of a nerd. But, if you consider nerdy as the new cool (as we do), then that makes us fabulous. This “pi” is because we love her. Had I thought ahead (and it wasn’t almost Purim!), I would have used white chocolate chips. Those go much better with pumpkin. Happy Pi Day!
PUMPKIN PI
1 Basic Pie Crust Recipe (I used one from Alana Chernila’s The Homemade Pantry)
1 cup cold, unsalted butter (2 sticks)
2.25 cups whole wheat flour
2t apple cider vinegar
1/2t salt
Cut the butter into smaller squares and combine with the flour in a stand mixer or food processor. Place bowl in the freezer. Combine salt, vinegar and 1/3 cup water in a separate bowl and freeze for 10 minutes. Remove the flour and butter mixture and pulse until crumbly. Add the liquid and pulse more until a dough forms. Freeze the dough in two balls for 1 hour and up to 3 days.
Pumpkin Filling
15 oz. pumpkin
1T pumpkin pie spice (or the equivalent of ginger+cinnamon+allspice+cloves)
3/4 cup brown sugar
2 eggs
1/2 cup milk (I used rice milk)
a handful of white chocolate chips
Mix the filling ingredients in a bowl and pour into crust. Make the shape of a π out of white chocolate chips. Bake at 375 degrees for 40-45 minutes.
