This apple cake from Smitten Kitchen has become a regular at our Rosh Hashanah table. I use whole wheat flour, replace the oil with apple sauce and reduce the sugar by half to make it healthier. It’s insanely good…that is, unless you eat all the apples off the top when before you serve it.

APPLE CAKE
6 apples
1 t cinnamon
5 T sugar
2 3/4 cups whole wheat flour
1 T baking powder
1 t salt
1 cup apple sauce
1 cup sugar
1/4 cup orange juice
2 1/2 t vanilla
4 eggs
Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.
Combine flour, baking powder and salt. Add apple sauce, orange juice, sugar, vanilla and eggs.
Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1.5 hours.
