If I had my way, I’d be one of those moms who makes all our snack food from scratch. And then I remember that I have a job, kids and other interests. Plus, any time I make homemade snack food, the plate is wiped clean in minutes. So much for packing it in lunches and impressing teachers.

Still, if I make anything, it’s these muffins and granola bars. They’re worth it. Even if this plate was empty a few minutes after I took the photo.

GLUTEN FREE BLUEBERRY MUFFINS
1 cup oats
1/2 cup almond flour
1/2 cup corn flour
1t baking powder
1/2t cinnamon
dash salt
1/4 cup maple syrup
1/4 cup oil
1/4 cup apple sauce
1t vanilla
1/2 cup coconut milk or soy milk
1 egg
1/2 cup blueberries

Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Add the dry ingredients to the wet mixture and stir thoroughly. Add the blueberries at the end and stir until just mixed. Bake in muffin tins on 350 degrees for 25 minutes.

  1. Lol Wendy! every time I toast a TJ multigrain waffle or give YS TJ honey wheat pretzels And I know better than to think They’re so healthy… I also wonder why I can’t make all our snacks homemade!
