Dinner Guest Post from Granola Girl

My 9-year-old just submitted her favorite dinner recipe to the Healthy Lunchtime Challenge & Kids’ State Dinner with the hopes of winning an invitation to The White House. Not likely, but if it were up to me, she’d win. Here’s her post:

My name is Adina. I’m in fourth grade. My family eats really healthy. In my neighborhood, some people don’t eat as healthy as us. They call us “Granoladox” because my mom has a food blog. When it’s warm, we grow a big garden with lots of veggies. I like to help with the garden. My mom started a running club at my school that I’m in. I even did some 5K races! I help my mom with her blog and cook some food. One of my favorite recipes is fish tacos. I help make them, and I use veggies from our garden.

FISH TACOS
1 piece of Tilapia per person
T butter
juice of one lime
1T soy sauce
2 scallions, roughly chopped
2 cloves chopped garlic
2-3 corn tortillas per person
shredded spinach
1 avocado
mozzarella cheese
salsa (see recipe)
sour cream (optional)

All by myself!

Saute the tilapia over butter on medium heat until browned–it’s okay if it breaks into pieces (You could also bread and fry them, but this takes longer). Add scallions, soy sauce and garlic and saute 1 minute more. Squeeze lime juice over the mixture. Warm tortillas on a tray at 300 for 3 minutes. Layer spinach, fish, avocado, cheese and salsa over the tortillas and fold over.
