
What this soup lacks in looks, it makes up for in taste and time. It takes all of 5 minutes to prepare it and another 15 minutes (or so) to cook it. Once it’s done, adults and kids alike will devour it.
CREAMY CORN SOUP
16oz. corn (I use one bag of frozen corn)
1/2t butter or oil
1 chopped onion3 cloves garlic, crushed and minced
3 cups water
1 cup milk (can substitute rice or soy milk)
1/2t salt
freshly ground pepper
Saute the onion in butter or oil over medium heat until lightly browned (about 5 minutes). Add garlic and saute one more minute. Add remaining ingredients and bring to a boil. Simmer for 15 minutes until corn is soft. Blend until smooth in a blender or with an immersion blender.
