We found one lonesome radish in our garden. My kids were in charge of planting them, and one was all that was ready last week.

Good thing it doesn’t take much to make a summer salad, when so many farmers’ market veggies are perfectly ripe. If checking lettuce gets old, you can throw together a quick salad with nothing more than snap peas and grape tomatoes. No checking or even slicing required!

Add this dressing for a delicious summer side.

CREAMY SUMMER DRESSING1 clove garlic
1/4 cup fresh herbs of choice (basil, oregano, cilantro, parsley or mint are all good)
2T lemon
1/2t Trader Jo’s 21 Seasoning Salute (not necessary, but totally awesome)
1/2t salt
dash course pepper
1/2 cup plain yogurt

Process the garlic and herbs in a food processor until chopped. Add lemon, spice, salt, pepper and yogurt and process more. Add 2t of water if the dressing is too thick (my yogurt is pretty thin so I don’t need any water). Pour desired amount over salad and enjoy. Delicious over eggs as well.
