Maybe it was the sun during my run or maybe it was the 8 mile bike ride with Granola Baby in the trailer–but when I came home famished 10 minutes before the big kids’ bus came along, we ended up with the most random dinner. Homemade waffles, black bean soup and cheesy steak fries. Told you I was hungry.
CHEESY STEAK FRIES
8 medium size potatoes, cut into wedges
1T olive oil
1t course salt
1t paprika
1t onion powder
1t garlic powder
freshly ground pepper
1/4 cup cheddar cheese
Preheat oven to 400 degrees. Cut potatoes into wedges. Combine oil, salt and spices in a large mixing bowl. Add potatoes and stir until evenly coated. Roast potatoes on a baking sheet for 30-40 minutes, until a fork easily pierces through them, stirring once in the middle. Sprinkle cheese on top and bake for one more minute. Serve with sour cream.
