If you’re on a diet, you might as well skip this post.
In fact, you might want to skip this whole week of Chanukah. Light your menorah and then just hide from all the oil on which everybody else is feasting.
But if you’re not on a diet, then go ahead and put all that oil to good use. Fry up those latkes. And when you’re done doing that, don’t just throw out that oil. Toss some breaded onions and breaded mozzarella in that pan while you’re at it.
Chanukah never tasted so good.
HOMEMADE MOZZARELLA STICKS
1 package Trader Joes braided spicy mozzarella
1 egg
1 cup breadcrumbs (try these from your leftover challah)
1/2t salt
1/2 cup oil (I used grapeseed oil, available at any good produce store)
Heat the oil in a frying pan on medium high heat. Mix the salt into your breadcrumbs in a shallow bowl. Crack the egg into a different shallow bowl and stir. Cut the mozzarella into chunks and then dip first into the egg and then into the breadcrumbs. Add the cheese chunks to the pan for about 20 seconds and then flip. Let fry for another 20 seconds and place them on a paper towel. Pat off the excess oil and serve immediately.
HOMEMADE ONION RINGS
2-3 large onions, sliced into rings
1 egg
1 cup breadcrumbs (try these from your leftover challah)
1/2t salt
1/2 cup oil (I used grapeseed oil, available at any good produce store)

Pat off the excess oil and serve immediately.
