Granola Baby is growing up so fast.
He likes an afternoon spot of tea these days, begging incessantly for “coco-wawa,” which refers to any hot drink–coffee, tea or hot chocolate.
Some days I acquiesce to warmed milk with a little chocolate in it, but most days when I prepare my own afternoon coffee, Granola Baby gets mint tea.
And every tea aficionado knows that a biscuit is essential with a cup of tea.
BERRY YUMMY CEREAL BARS
1 cup old fashioned oats
1 cup whole wheat flour
1t baking powder
1/2t baking soda
1/2t salt
1/2 cinnamon
1/4 cup butter, Earth Balance or coconut oil
1/4 cup almond butter
1/4 cup honey
1/4 cup apple sauce
1t vanilla
1-2t soy milk (if needed)
Filling:
1 cup fresh or frozen blueberries
1/2 cup jelly of choice
Combine the oats, flour, baking powder and soda, salt and cinnamon in a food processor. (If you don’t use a food processor, the oats will make it seem more like a granola bar, which might be fine.) Add the remaining ingredients for the crust and mix until just combined. Let it cool in the fridge for at least 20 minutes.
Combine blueberries and jelly to make your filling.
Once the dough is ready, divide it into two halves. To make squares, press one half into the bottom of an 8×8 pan, add the filling and press the other half evenly on top. Bake on 350 for 20 minutes.
To make bars, roll out each half on a floured surface to about a 1/4 in. each.
Cut into even rectangles. Smear filling in center of half the rectangles, and place another half on top, pressing down the sides. Bake on 350 for 12 minutes.
I love the grime on the high-chair–very photogenic.

I am so excited to try making these. Have you tried to freeze them?
I haven’t frozen these in particular, but I can’t imagine it would be a problem. Our family eats them up too fast to freeze!
