No school + no camp yet = no time.
Sure, we’re having fun, but I hardly have time to breathe, let alone cook and eat. For lunch, we’re feasting on smoothies. And at breakfast. And for snacks. And sometimes for dinner, too.
Good thing they’re full of good eats. Lately, I’ve been sneaking spinach into the smoothies. Just don’t tell my 4-yr.-old.
MINT CHOCOLATE CHIP SURPRISE
1/2 cup plain or vanilla yogurt
1 overripe banana
1/2 cup milk
1/4 cup fresh spinach
1 packet stevia (omit if you used vanilla yogurt)
2 drops mint extract
1T chocolate chips
Blend the yogurt, milk, banana and spinach until smooth. (I use the “liquify” setting on my blender until there are no more spinach bits.) Add the remaining ingredients and blend until chips are mostly chopped. Serve very cold.
