If I could go back and tweak our wedding registry, there are a few items I could do without. That Nambe bowl that everyone my age owns? No thanks. And the enormous mixer that takes up half of any decent-sized kitchen counter? I brought that back to Bed, Bath & Beyond ages ago.
But the waffle maker that I wasn’t so sure we needed? It’s still going strong. And I’m not above serving my kids (or myself, for that matter) waffles for dinner. I just add a creamy carrot or squash soup to round out the meal.
BANANA BERRY WHOLE WHEAT WAFFLES
2 cups whole wheat pastry flour
2T wheat germ (optional)
2t baking powder
1/2t salt
2 eggs
1.5 cups milk
2T vegetable oil or melted butter
1 medium banana
1/2 cup blueberries
Sift the dry ingredients together. Combine the wet ingredients in a separate bowl. Blend two together and onto waffle maker. Makes 16 waffles.
