By Monday morning my cupboards are bare, and my fridge looks even worse. I’m never sure how we managed to devour the bags full of produce from the farmers’ market already, but every week we do. Combine that with the late starts that are inevitable on Mondays, and smoothies for lunch becomes an absolute necessity. By stocking up on frozen fruit and storing my blender in an easy-to-reach place, my lunch for work is ready in 2 minutes. That is, if my kids don’t eat it up.
SUMMER SMOOTHIES
1/2 cup strawberries (if frozen, be sure to add these first and use the “ice breaker” setting on the the blender)
1 over ripe banana
1/2 cup blueberries
1/2 cup plain or flavored yogurt
cup of milk
T peanut butter (optional but delicious!)
T flax seed (optional)
T wheatgerm (optional, but this is what I find makes it more filling)
Blend it all together and enjoy!
For a fun treat, leave out the blueberries, strawberries and peanut butter and instead add T instant coffee and cocoa powder.
